Pajeon

Pajeon is the pancake Koreans eat when it rains, a crisp‑edged, chewy‑centered griddle cake dense with scallions, cut into wedges and dragged through a soy dipping sauce. It's beloved precisely because it's simple.

Ours comes two ways, loaded with seafood or dense with shrimp, squid, and chives, hot from the pan while your grill comes up to temperature. Split it across the table with a cold Anto Beer, or alongside Korean fried chicken if you're building a spread.
