Bossam

Not everything at a barbecue restaurant meets fire. Bossam is pork belly gently steamed instead of grilled, soft, mild, and made to be wrapped: a slice of pork, a piece of bossam kimchi, sometimes a dab of salted shrimp, folded into cabbage or lettuce.

At Anto, order the steamed pork belly from the appetizers with a side of our bossam kimchi, the same kimchi we make in house and sell to go. It's the quiet counterpoint to a table full of sizzling meat, and a favorite for sharing while the grill works.
